Sponge banana vanilla bread

1. No need for a mixer for this recipe.

2. Preheat the oven to 350°F(175°C).

3. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

4. Mix in the sugar, egg, and vanilla.

5. Sprinkle the baking soda and salt over the mixture and mix.

6. Add the flour last, mix.

7. Pour mixture into a buttered 4x8 inch loaf pan.

8. Bake for 1 hour. Cool on a rack.

Apple turnover toast

1. Preheat the oven to 400°F.

2. Combine the orange zest and orange juice in a bowl.

3. Peel, quarter, and core the apples and then cut them in 3/4-inch dice.

4. Immediately toss the apples with the zest and juice to prevent them from turning brown.

5. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.

6. Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square.

7. Cut each sheet into 4 smaller squares and keep chilled until ready to use.

8. Brush the edges of each square with the egg wash and neatly place about 1/3 cup of the apple mixture on half of the square.

9. Fold the pastry diagonally over the apple mixture and seal by pressing the edges with a fork.

10. Transfer to a sheet pan lined with parchment paper.

11. Brush the top with egg wash, sprinkle with sugar, make 2 small slits, and bake for 20 minutes, until browned and puffed.
