Have you heard of rice wasp cracker? See pictures of the insect biscuit that is a delicacy in Japan

Japan is known for a lot of things. Here in Nigeria, we know them as the creators of some (if not all) of our beloved anime series. But there's also something else that they've created which you might not know of, and that is a biscuit filled with insects which is known as Jibachi senbei.

If you were to open a packet of biscuits and get greeted by the sight of insects embedded in it, there's a high chance that the company responsible will be getting a query followed by a lawsuit. But in Japan, not only is this stuff completely normal, its also a delicacy.

To be precise, the insects used in the production of these special biscuits are digger wasps which are called jibashi in Japan. Digger wasps are those insects that look like bees and deliver very painful stings, but a variety that spend their time digging holes and laying eggs in the ground.

These insects are mixed in with rice crackers, known as senbei to create Jibashi senbei or wasp rice cracker.

The whole concept is quite new, having originated about a decade ago. It is the product of the teamwork of a local biscuit maker and a wasp hunter who, together with other enthusiasts, call themselves Omachi digger wasp lovers club. The snacks are made in Omachi Town near Tokyo.

The first step in making Jibashi senbei is, of course, the procurement of the wasps. This job is done by professional wasps hunters who comprise of village elders who set traps at wasp breeding spots to lure the insects in.

Next, the wasps are boiled till they are nice and ready. Afterwards, they are dried before being added to the rice cracker mix which is then cut out in round shapes by a hot iron cracker cutter.

The result is the "delicious" rice wasp crackers that are sold in bags of up to 20 crackers, each containing a significant amount of very visible - and tasty - wasps.

Rice wasp crackers are said to have a very unique scent as a result of the presence of the digger wasps. The crackers themselves are said to be mildly sweet but the wasps add a sharp bitter acidic taste to the treat. In all, rice wasp crackers make for a highly proteinous meal just like other insect-based delicacies. Can't wait to try it out!
